Hooper might have thought differently if he was looking into the glistening white eyes of this beaut. Seared scallops, bacon chutney, and a perfectly grilled burger patty will satisfy the biggest of appetites—whether on land or at sea. Try out this burger when you can’t decide between surf or turf.
3 large scallops
Pinch of sugar
Pinch of salt
Pinch of black pepper
6-ounce burger patty
3 ounces of bacon chutney (see below)
1 buttered and toasted brioche bun
½ pound bacon, minced
1 large onion, minced
1 tablespoons butter
8 ounces bourbon
For Bacon Chutney
First, make your bacon chutney. Add all chutney ingredients into a skillet and mix. Bring to a simmer and let cook over medium-low for 20 minutes. Set aside.
Sprinkle sugar, salt, and pepper on the scallops.
Sear the seasoned scallops in a frying pan for 45 seconds per side over high heat.
Grill the burger to desired doneness.
Place the burger patty on the bottom bun, top with the bacon chutney and then the seared scallops. Serve!
